  • 25 gr. bacon
  • 8 teeth of Garlic
  • Water
  • Olive oil
  • Salt

Andalusian migas recipe

  1. The first thing is to prepare the crumbs for when we are going to cook them, and for this we will have to prepare them the day before. Crumble the bread into small pieces and put them in a deep dish. Pour water into the bowl with a little salt and cover the bowl overnight.
  2. The next day, cut the garlic in half, without peeling it, and fry it in the pan. When they are a little golden, you put them aside and make the bacon until it takes a golden hue. Then you also push it away.
  3. Chop the chorizo ​​into small cubes and when it is well done, you also set it aside. It is the turn of the bread, which you are going to fry in that same oil, over low heat, using a slotted spoon to turn it without stopping so that it does not burn. You have to have them done for 25 minutes.
  4. After 25 minutes, add the garlic cloves and continue to stir for half an hour. When the bread is loose and golden, add the bacon and chorizo.
  5. Heat for another 5-10 minutes and the dish is ready to be enjoyed by all.
