- 250 gr. of bread
- 550 gr. from tomatoes
- 75 ml. Of olive oil
- 25 ml. sherry vinegar
- 1 tooth of Garlic
- two eggs
- 100 gr. from Serrano ham
Andalusian salmorejo preparation
- Preparing it is very simple and the first thing you have to do is peel the tomatoes and chop them well, into quarters or wedges, to put them in the blender glass.
- You are going to soak the bread for a few minutes in the olive oil and sherry vinegar and, while you wait, crush the tomatoes, and when they are well crushed, add the bread along with the vinegar and oil mixture and crush everything again together.
- Now peel and chop the garlic clove, which you also have to add to the mixture, and beat again while sprinkling a little salt.
- Cook the two eggs in a pot with water for fifteen minutes and the ham, meanwhile, you can fry it if you want, otherwise you can add it raw.
- Cut the egg into squares and add it, along with the ham, to the bowls. Also add the sauce that you have beaten and mix. Your Andalusian salmorejo is ready! You’ll love it!
