  • 100 gr. from almonds peeled and toasted
  • 300 gr. wheat flour
  • 300 gr. lard
  • 350 gr. icing sugar
  • 1 lemon
  • 1 heaping teaspoon cinnamon

Preparation of the almond polvorones

  1. The first thing you should do is put the flour in a pan and toast it over low heat without stopping stirring for a second. It has to be on the fire for approximately seven minutes. When this time has passed, you can remove it.
  2. Now sift the flour to break up the lumps by passing it through a very fine sieve, then chop the almonds in a mortar or mincer and wash the lemon, dry it and grate the skin. Now we are going to make the butter in pomade point.
  3. Take the butter and cut it into cubes, then put it in the microwave for 30 seconds and, as soon as it has melted, you will have to beat it so that it is all the same. Let it cool down.
  4. If the flour and butter have already cooled, you have to make a volcano with the flour and put the butter in the center along with the almonds, the lemon zest and the icing sugar. Reserve only 50 grams of sugar and work this dough with your hands until you get a homogeneous mixture. Put it in the fridge and let it cool for an hour and a half.
  5. After this time, put the oven to preheat to 120ºC and, while it heats up, spread the dough over a smooth surface, forming a plate one centimeter thick more or less. Line the cookie sheet with parchment paper. We are now going to shape the polvorones.
  6. With the help of a round mold or a glass you have to make the dough in circles and, as soon as you have them, you have to put them on the oven tray with a separation between them of about 3 centimeters.
  7. Now put the tray in the oven and let the polvorones cook for about 25 minutes. After this time, take out the tray and sprinkle the icing sugar over them. Your polvorones with almonds will be ready when they cool. Very good profit!
